HC is hardcore mode. Perma death.
For sheep shearing you set up a grass area with some sheep in it, set up some dispeners facing the sheep with shears in each one. And you need observers linked to the dispensers and facing the grass blocks. The sheep eat the grass, and when the grass regrows, the observers notice the state change and trigger the dispensers which activates the shears.
The XP farm is a large enclosed area (I forget the dimensions, around 28x28 wide and a few blocks tall) with trenches filled with water that flows down towards a 2x2 hole, down into a 23/24 block shaft. At the bottom of the drop are usually blocks or slabs and underneath those are hoppers connected to chests, to collect drops. The enclosed area is completely dark and the mobs spawn and at some point they will walk into the trenches of water and get pushed to the hole and drop 23 blocks, which is just enough to damage them so you can finish them off with a sword strike and get the xp. There's a bit more to it than that (involving hatches and slabs in the dark room), but that's the standard design.
Most people just look up how to build things online and make them in their survival world. There is some kind of farm or automated system for nearly every resource. Villager sorting, item sorting, Enderman farms, gunpowder farms, you name it. Exceptions are diamonds and some other stones.
